Ochro and Salt fish pelau recipe
Ochro and Saltfish Pelau recipe Ingredients 8-10 small ochros, sliced 2 cups rice 1 cup coconut milk 3 cups water 1/4 lb salt-fish, boiled to remove excess salt 1/2 onion, finely chopped 1 clove garlic, grated 1 small celery stalk, finely chopped 2 pimento peppers, finely chopped 1 large tomato, chopped 2 tbsp of oil 1 hot pepper 1/4 tsp black pepper salt to taste(if necessary) Method: * Hot oil in pot, then put in salt-fish to fry with chopped seasonings. Stir for 3 minutes. * Pour in both coconut milk and water, then add rice and cook on a moderately high burner for 10 minutes. Let pot come to a boil. Put in hot pepper but do not cover pot. * Remove hot pepper and low down burner. Then put in chopped tomatoes, cover to steam and allow further cooking, for another 10 minutes. * Then uncover pot, and allow to further steam for another 10 minutes or for remaining moisture to evaporate. Taste before adding salt. * Makes approx. 4-5 servings. |
