A New Sweetbread Recipe

One of my favourite desserts is Sweetbread. I'll eat almost any kind of it from almost anywhere. But being a health conscious person I have always wondered, how could I enjoy my favourite dessert with less sugar.

So one day I came up with my own recipe while baking in my kitchen. Here is a copy of that recipe. (Any duplicate of it anywhere else is a coincident).

Homemade Coconut Sweetbread

Ingredients:

4 cups of whole wheat flour or white flour

2 tbsp baking powder

1 tsp vanilla essence or mixed essence

2 eggs (any will do)

1 cup soy milk or any other will do

3 cups chopped coconut (blended with water to extract coconut milk)

1/2 tsp almond spice

1 lb raisins

1/2 lb whole sultanas

1/2 lb blended sultanas

1 cup brown sugar or white

1/2 cup butter or margarine

salt to taste

note: the preferred choice of ingredients would be for the more health conscious.

Method:

Combine all dry ingredients in a large bowl and set aside. Lightly blend 1/2 lb of sultanas, set aside. Lightly whisk milk and egg together and set aside. Place the chopped coconut in a blender with 4-5 cups water. Or just enough to puree coconut. When this is done, combine pureed coconut with dry ingredients while mixing with a spoon. Put in the 1/2 lb blended sultanas, add the milk and egg to this and continue mixing with a spoon. Ensure that all ingredients are combined even or your end product will tell on you. Last but certainly not least, put in the rest of your fruits.

Be sure to mix with a spoon thoroughly and carefully. Place in two separate baking loaf pans. (better if rectangular in shape). Bake for 45 minutes to an hour at 350 degrees. This might be altered for different make of ovens. Allow to cool before slicing.
